NEEDLE - ROLLED MACARONI
The needle-rolled macaroni are typical of the
Croatian traditional islands’ cuisine. Macaroni
are made of fl our, eggs, oil, salt and tepid water,
all blended in a homogenous mass and well
kneaded. The dough is then divided in several
pieces, each forming small rolls. Rolls are cut in
even smaller pieces, and rolled along the knitting
needle to assume the shape of macaroni. As a
main dish macaroni are served with meat stew
and accompanied by the selection of traditional
home-made Island’s wines.
